Delicious cookies that combine the nostalgic flavors of pineapple upside-down cake with a fun, modern twist.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2½ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 10–12 canned pineapple rings, well-drained and patted dry
- Additional sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
- Add the dry mixture to the butter mixture to form a soft dough.
- Roll the dough into 1½ tbsp balls, flatten them slightly, and place them on the lined baking sheets.
- Top each dough disk with a pineapple ring, pressing gently into the dough.
- Sprinkle a bit of sugar on top of each pineapple for extra sparkle.
- Bake for 12–14 minutes until the edges turn golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a rack to finish cooling.
Notes
Perfect your technique by using room temperature butter and properly measuring ingredients. For variations, try using other fruits like peaches or cherries.
