Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1012 canned pineapple rings, well-drained and patted dry
  • Additional sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
  5. Add the dry mixture to the butter mixture to form a soft dough.
  6. Roll the dough into 1½ tbsp balls, flatten them slightly, and place them on the lined baking sheets.
  7. Top each dough disk with a pineapple ring, pressing gently into the dough.
  8. Sprinkle a bit of sugar on top of each pineapple for extra sparkle.
  9. Bake for 12–14 minutes until the edges turn golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a rack to finish cooling.

Notes
