  • 3/4 cup vegetable oil
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the flour, baking soda, baking powder, salt, black pepper, garlic powder, and onion powder in a large bowl.
  3. Whisk together the vegetable oil, sugar, eggs, and vanilla extract in another bowl.
  4. Stir in the grated zucchini.
  5. Gradually, add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool before slicing and serving. Enjoy as a side or snack!

Squeeze out excess liquid from grated zucchini for better texture. Store in the freezer for future use.
