Ingredients

  • 3 to 4 pounds sirloin tip roast
  • 4 medium-sized potatoes, cut into quarters
  • 4 carrots, cut into large chunks
  • 3 stalks celery, sliced
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Optional: Fresh parsley, chopped (for garnish)

Instructions

  1. Start by washing and chopping your potatoes, carrots, celery, and onion. Set them aside.
  2. Season the roast. Generously season the sirloin tip roast with salt, pepper, thyme, and rosemary on all sides.
  3. Sear the meat. In a large skillet, heat a little oil over medium-high heat. Once hot, sear the roast for 3-4 minutes on each side until browned.
  4. Layer the vegetables. Place the chopped vegetables at the bottom of the crock pot.
  5. Add the seared roast on top of the vegetables.
  6. Mix the sauce. In a small bowl, combine the beef broth, Worcestershire sauce, and minced garlic.
  7. Pour the beef broth mixture over the roast and vegetables.
  8. Cover and cook on low for 8 hours or on high for 4 hours, until the meat is tender.
  9. Check for doneness using a meat thermometer (internal temperature should reach at least 145°F).
  10. Serve the roast with the vegetables and juices from the pot.

Notes

For added flavor, marinate the roast overnight in the Worcestershire sauce and spices.
