- 3 to 4 pounds sirloin tip roast
- 4 medium-sized potatoes, cut into quarters
- 4 carrots, cut into large chunks
- 3 stalks celery, sliced
- 1 large onion, quartered
- 4 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Optional: Fresh parsley, chopped (for garnish)
Instructions
- Start by washing and chopping your potatoes, carrots, celery, and onion. Set them aside.
- Season the roast. Generously season the sirloin tip roast with salt, pepper, thyme, and rosemary on all sides.
- Sear the meat. In a large skillet, heat a little oil over medium-high heat. Once hot, sear the roast for 3-4 minutes on each side until browned.
- Layer the vegetables. Place the chopped vegetables at the bottom of the crock pot.
- Add the seared roast on top of the vegetables.
- Mix the sauce. In a small bowl, combine the beef broth, Worcestershire sauce, and minced garlic.
- Pour the beef broth mixture over the roast and vegetables.
- Cover and cook on low for 8 hours or on high for 4 hours, until the meat is tender.
- Check for doneness using a meat thermometer (internal temperature should reach at least 145°F).
- Serve the roast with the vegetables and juices from the pot.
Notes
For added flavor, marinate the roast overnight in the Worcestershire sauce and spices.
