Description
A delightful French toast casserole filled with fresh or frozen blueberries, perfect for brunch gatherings or cozy family breakfasts.
Ingredients
Scale
- 1 loaf French bread, cut into cubes
- 2 cups blueberries, fresh or frozen
- 6 large eggs
- 2 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- Butter or cooking spray (for greasing the dish)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter or cooking spray.
- Place the cubed French bread in the greased baking dish and sprinkle the blueberries over the top.
- Whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt in a large bowl. Pour this mixture evenly over the bread and blueberries.
- Press down gently to ensure the bread absorbs the egg mixture.
- Cover the dish with foil and let it sit for about 30 minutes or refrigerate overnight for best results.
- Bake covered for 30 minutes. Remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the casserole is set.
- Let it cool slightly before serving. Enjoy the casserole warm, optionally topped with maple syrup or whipped cream.
Notes
For extra texture, consider using a mix of breads such as challah or brioche. Refrigerating overnight enhances flavor.
